Poke, Grain, Salad and OKAO Bowls: Four Build-Your-Own Bowls Explained

They all arrive in a bowl and can be built in layers, but what goes inside—and how it is prepared—can be very different.

The bowl has become a meal format: start with rice or greens, add a main ingredient and toppings, then finish with sauce. These four familiar styles are easy to confuse, so here is a practical guide.

Poke bowl

Poke has Hawaiian roots; the word means “to cut into pieces”. The traditional dish uses cut fish with simple seasoning. Many contemporary poke restaurants build on rice, brown rice or quinoa, then add fish, avocado, edamame, seaweed and soy- or mayonnaise-based sauces. Interpretations vary widely between restaurants.

Grain bowl

A grain bowl begins with brown rice, quinoa, wheat or another grain, topped with roasted vegetables, beans, nuts and sometimes chicken or egg. It is often served warm or at room temperature.

Salad bowl

A salad bowl puts leaves first, usually with little or no rice, then adds protein, raw toppings and a vinaigrette or yoghurt-based dressing. It is generally served cold.

OKAO Bowl

The OKAO Bowl is the hot, build-your-own bowl created by THIRD HEARTH. Warm rice forms the base, with steam-roasted proteins and vegetables cooked to order. Cold sides, sauce, Spark and Finish can all be customised. It draws on European hearth cooking and the American power bowl, adapted to an Asian everyday meal.

FAQ

01How is an OKAO Bowl different from poke?

The OKAO Bowl centres on hot food: steam-roasted protein and hot vegetables are made to order and served with warm rice. Every layer can still be customised, or you can choose a chef-built Craft Fire bowl.

02Does an OKAO Bowl contain raw fish?

No. Current fish and seafood proteins are fully cooked, including Lime Leaf Fish, Salmon Fillet and Garlic Shrimp.

03Must an OKAO Bowl include rice?

No. Choose greens, an available half-and-half base, or no base where offered.
